Pressure Cooker Blueberry Steel Cut Oats
Man is it cold out. The rain is bone chilling. I don’t even want to be outdoors and that is saying a lot, coming from me.
I decided last week to go back to making all our meals ahead of time. It saves me time, energy and money. Today, was the perfect time to start! I’m sharing one of my husband’s favorite morning breakfasts. Pressure cooker blueberry oats.
He thinks it is heaven in a jar 🙂
I’m never telling him it is one of the easiest recipes to make.
Ingredients:
3 3/4 cups of water
1 1/4 cups Quaker Steel Cut Oats (not quick cook kind)

Directions:
1.) Measure & pour water and steel oats into the Power Pressure Cooker XL and seal.
2.) Set 15 minutes on the timer on the rice/beans setting.
3.) When the timer goes off; do a quick release.
4.) Wait 4 minutes to cool down.
5.) Add in either sugar, brown sugar or honey to the level of sweetness you’d like.
6.) Add an entire bag of frozen blueberries.
7.) Spoon into single serve jars. Cool and refrigerate.
How Many Servings Does It Make?
Makes 3.5 pints or 8- 1/2 pints.
Reheat or Just Eat:
The best thing about this recipe is you can literally grab a spoon and run out the door in the morning. It can be eaten cold or hot.
If you have a few extra minutes, you can remove the top ring and lid, pop the jar in the microwave and heat it at 20-30 second intervals; stirring in between intervals.
Serve With:
Slivered almonds and fresh blueberry toppers.
