Fresh Creamed Freezer Corn Recipe
Wondering what you can do with all that garden fresh corn on the cob? Try this fresh creamed freezer corn recipe and you will enjoy that sweet corn taste well into the winter.
Ingredients:
4 ears corn
1 tsp. sugar
1/4 c. butter
1/2 c. heavy whipping cream
1/2 tsp. freshly ground pepper
1/2 tsp. salt
Instructions:
Husk the corn. Cut corn from cob, scraping cob to remove the kernel pulp.
When you are finished the corn will look like this.
Melt the butter in pan over medium heat. Add in corn and cook for 1 minute. Stir in pepper. Gradually add in the heavy whipping cream, stirring constantly.
Cook uncovered over medium heat for 10-12 minutes or until most of the liquid is absorbed. Be sure to stir corn frequently. Stir in salt in once the corn is taken off the burner.
To Freeze:
Let cool and package into freezer bags. Mark with name and date. Freeze. When you wish to serve just reheat.
