Looking for a way to use up all your garden tomatoes?  How about making this tomato paste recipe? Tomato paste is used in plenty of hearty meals through the winter months.

Ingredients:




8 quarts (4 dozen) peeled cored chopped tomatoes.
1- 1/2 cups (3)  sweet red peppers
1 Tablespoon salt
1 garlic clove
2 bay leaves

Directions:

1.) Combine tomatoes, sweet peppers, bay leaves and salt in a large stockpot and cook slow.

2.) Remove the bay leaves and set aside. Press the mixture through a sieve.

3.) Return tomato mixture to stock pit, peel garlic and throw into tomato mixture whole, do not chop it up. Also, return bay leaves.

4.) Cook another 2.5-3 hours until mixture is thick. Be sure to stir frequently to prevent the mixture from sticking to the bottom and sides.

5.) Remove the garlic and bay leaves.

6.) Pour the hot tomato paste into hot 1/2 pint jars.  Leave about 1/4 inch headspace. Place cap on and process in boiling hot water bath for 45 minutes.
